Summer Berries Marinated in Balsamic & Vanilla


INGREDIENTS
  • 1/2 cup of Massimo Gusto Modena Balsamic Vinegar
  • 4 tablespoons brown sugar
  • 1 teaspoon vanilla bean paste
  • 500g strawberries, halved
  • 250g blueberries
  • 250g raspberries
  • 250g Greek-style yoghurt
  • Mint leaves, to serve

Directions
Step 1

Whisk vinegar, sugar and vanilla in a jug until sugar dissolves. Place the strawberries, blueberries, and raspberries in a large glass bowl.

Step 2

Divide the berry mixture among bowls, and top with yoghurt. Sprinkle with mint leaves.

Step 3

Pour vinegar mixture over the berries. Set aside for 10 mins to marinate. Drain and chill until ready to serve.
